
A good friend of mine is having her birthday tomorrow (Happy Birthday Mary), so I thought I’d make her an easy lemon Bundt cake. Anything with lemon is always so refreshing, cool and summery. It looked pretty tasty so I thought I’d show and tell the recipe… This is an easy and delicious dessert…( I’m not a great cook, the easier the better, so I hope you’ll like this).
Cake:
1 -(18 oz) pkg. lemon cake mix
1- (3.4 oz.) pkg. instant lemon pudding mix
1/2 -cup veg. oil
4- eggs
1 -cup lemon/lime soda (Mountain Dew reg., not diet)
Preheat oven to 325*, grease and flour a 10 inch Bundt pan. Combine cake mix, pudding mix,
then stir in oil. Beat in eggs. Then stir in soda. Beat for 2 min. Pour in Bundt pan. Cook for approx. 45-55 min. Cool completely.
Frosting:
1 - 8 oz. cream cheese (room temp.)
1 1/2- cup confectioner sugar
zest of one lemon
2 -tablespoons lemon juice
Beat together all but 1/2 of the zest to sprinkle on top of the frosting.
I have fresh mint growing in my garden,( you can buy it in the grocery store), so I cut some to arrange around, and in the hole of the cake. Then add fresh raspberries and sprinkle the rest of the lemon zest over the top. Not for dieters, but a little won’t hurt too much… Now, I have to keep my husband and kids out of it before it gets to her tomorrow!
A great gift idea… buy a pretty cake pedestal, (HomeGoods has some beautiful ones). Make a yummy cake to put on it and give both as a gift. What could be nicer!

I just printed off your recipe..I have a 25th wedding anniversary party to go to on Sunday and I plan to make the cake…it looks wonderful..you are surely talented in many areas. Have fun helping Alli with some of her design choices for her new townhouse..it sounds and looks great. This looks and sounds delicious! I am not very good at baking, but this sounds pretty easy and it sounds like it would taste great. Had I known about it on Saturday, I would have prepared it for company coming on Sunday.
What makes it even more exciting is the way that it looks. It looks like a recipe in Home & Garden Magazine. Thanks for sharing! I must try it!

Thanks for all the nice comments. I hope you’ll try the cake and let me know how you like it. Its so easy but it looks so special. My friend Mary seemed happy and excited to get it.
A couple more hints….
The mint can be purchased in the grocery store. (mine just grows all over in my garden).
Dry the raspberries good on a paper towel, so they don’t bleed into the frosting. Also the mint acts as a “nest”.
The cake may take as long as 55+ min. to cook depending on your oven.
Check it with a toothpick after 45.
Refridgerate cake because of the cream cheese.
I used a flexible silicone Bundt pan, any should work, grease and flour well, just let cake cool 10-15 min before you try to take it out of the pan.
I always like to know all the “tricks” so it will come out right the first time.
If I think of any more I’ll let you know.

8. I would be great if we could print out just the recipe without printing all 4 pages of this piece. I make something similar but without the soda and I just run a glaze over the top with lemon juice and conf. sugar, poking holes in the cake so it will absorb the glaze and the lemon flavor. Will definitely make this very soon. Thanks and keep them coming.
P.S. My husband wants to put a bracelet on me that beeps when entering Home Goods so that I can’t get in!!! Spend lots of $$$ there!!

Thank you so much for this recipe…it’s similar to one my mother used to make which was so good..her recipe did not call for the soda, but soda will probably make it more moist. She put a lemon drizzle over the top.

Your Lemon cake sounds wonderful as well. There’s so many ways to make a delicious lemon cake. Anything with lemon has such a fresh taste. I will have to try poking holes in the cake and letting the glaze absorb in. Sounds yummy!

If husbands really knew how much money we’re saving them then they would appreciate our shopping trips!!! LOL.

17. I make a Lemonade Cake Different ingredients.
Lemon Cake Mix
Lemon Jello
Hot Water (1/2 cup) to dissolve jello
4 eggs
1/2-3/4 cup oil ( I usually use 3/4 cup but if your short on oil use 1/2 cup
Reconstituted Lemonade (Small Can) undiluted
1/2 to 1 cup sugar
Mix lemon jell with hot water, set aside. In mixer bowl put in cake mix, eggs and oil. Mix and then add jello.
Put in a greased and floured Bundt or Tube pan.
Bake 1 hour. Some ovens vary so use your time according to your oven.
While cake bakes mix lemonade (undiluted) with sugar to make a syrup.
When cake is done remove from oven and poke holes in the cake, pour lemonage syrup over cake and let cool completely in the pan. When cool remove and I like to refrierate. This makes for a refreshing taste.

19. Wow Jan, yours sounds good too!!! I’ll give yours a try. I like the idea of poking holes in the cake to get all the lemon syrup in the cake. Someone else had that idea as well. There are so many recipes for Lemon cake, I usually find one I like that comes out well and I stick to it.
