I thought this table display was beautiful. Maybe an idea for your dinner table preps for next week. That is not my main topic for this post. I would like to share with you my sweet potato recipe. It is so easy, I make it often and don’t feel the need to save it for once a year. Not only that, you will not require a larger pant size the following day! Yippee!!
Easy Sweet Potatoes –
2 large sweet potatoes
skim milk
1 pat butter
spices to taste
instant potatoes (optional)
miniature marshmallows
Microwave or boil sweet potatoes until soft. (Peeling cooked/cooled potatoes is much easier than peeling them raw.) After spraying my baking dish, I then add the potatoes and puree them, adding skim milk a little at a time. At this point I usually switch to a fork adding a small pat of butter and spices ( I use a dash of nutmeg and cinnamon, with a pinch of allspice) I keep the instant potatoes handy whenever I make mashed potatoes (either sweet or white) because I don’t have to worry about making them to thin that way. I can always thicken them to desired consistency with instant potatoes. Top the potato mixture with miniature marshmallows and bake until potatoes are warm and marshmallows are puffy and golden. Your oven is probably warm anyway, but I usually bake at 350 degrees for about 10 – 15 min.
This recipe makes four servings, just keep adding pototoes for a larger crowd. This is my family’s favorite, and although the amounts aren’t specific, it allows creativity, it’s yummy, and it won’t increase your waistline.

This sounds delicious and yet so simple…..I am going to try it this year!!!
In the past I have used a recipe for a sweet potatoe souffle, that requires so many more ingredients and will definitely tip the scales in the wrong direction! Thank you for sharing this, and I hope you and yours have a fabulous holiday!

3. Hi Deb,
Any sweet potatoe recipe is all right with me! Sweet potatoes are a part of my DNA. This sounds like a simple dish that can be made very easily! I look forward to trying it.
Happy Thanksgiving! But then again, every day is a day of Thanksgiving.

This sure sounds good and easy. I ‘m not having Thanksgiving at my house this year, so if I’m asked to bring a dish, I’ll make this and take it.
I’ll have to post a good recipe that our family makes. Theres always that one recipe that someone makes, usually a Mom or Grandma, that ,try as you might, it never comes out quite as good as when they make it. I think they add in a secret ingredient when we arn’t looking…. a dash of LOVE.

Cathy you are so right about those dishes that Mom makes. Those wonderful tastes that we just can’t seem to duplicate no matter how hard we try. One thing I forgot to mention above, and works great if you are taking this with you, is that this dish can be made the day ahead and then you just add the marshmallows and bake it when needed. One less thing to do that day when you are sooooo busy anyway. Thanks girls for your input. May your week be filled with moments that make wonderful memories, and you are right Betty, everyday gives a reason to be thankful.
