Veggie Prep
This dish has become one of our family’s favorites. It is rare for me to be completely creative, leaving all cookbooks in the cupboard, but this veggie combo came out of my dislike for most plain vegetables.

I am a soup and salad lover. Unlike our middle child, who does not like anything on his plate to touch . . . I prefer dishes where all of the flavors mix and mingle. So, below you will find Deb’s Vegges:

Any fresh or frozen vegetable - I use zucchini, summer squash, asparagus, broccoli, or a mixture of any favorites that I think go well together.

I place the veggies on the bottom of a Pam sprayed baking dish. Then on top of that I layer: a no salt spice mixture, like Mrs. Dash, sliced fresh mushrooms, sliced onion, sliced fresh tomatoes, swiss cheese, and paprika for color.Deb\'s Veggies Once the preparations are complete, you can either bake the veggies at 350 degrees for 20 -30 minutes, or microwave for 6-8 minutes; depending on how crisp you like them.

Now, for the best part of this recipe . . . at least I think it is the best part. You can vary the ingredients any way you like. If you don’t like mushrooms or onions, leave them out; you might add bacon bits, slivered almonds, or your favorite spices. You can try different cheeses. I use swiss, because it is the lowest in sodium. This recipe would work well with any cheese that melts well.

8. That sounds yummy! I use several different chesses. Tonight I am going to make it with spinach and hashbrowns as the base. So many choices - so much fun!
