
Okay it’s time for another variation on a theme. I have been trying out a few new veggie recipes again. Remember, I am a soup and salad lover! On top of that, I have given up eating meat. Talk about a need to develop my creative side! The problem is, I don’t really like to cook. I want my time in the kitchen to be brief, I want clean up to be minimal, and I don’t want to waste (or waist – depending on how you look at it) calories on anything I don’t find delicious.
So, last night I tried to see if I could come up with a new recipe with the things I had on hand. Below you will find – Deb’s Mac and Spinach and Cheese:

I began by spraying my baking dish with Pam (olive oil.)
To that I added: 4 cups cooked pasta (leftover), 3-4 cups chopped fresh spinach, 1/4 cup chopped onion – I mixed that together.
Over the pasta mixture I poured: 4 beaten eggs to which I added garlic, salt, and pepper.
Next I layered a sliced tomato and a mixture of shredded cheeses – monterey jack, feta, and swiss. I then sprinkled the top with Mrs. Dash Tomato and Basil seasoning and paprika.
After baking it at 350 degrees for 30 to 40 minutes. I served it with a side of mango salsa.
It may not win the “Platinum Colander Award,” that my dad won last week for his Mac and Cheese. Now, don’t go looking for the “Platinum Colander Award,” it’s a local competition among friends in Fort Myers, FL. None the less, I am very proud of my dad for winning. Who knew he could cook? LOL I must say that I do get my throw things in a dish and see how they turn out traits from him, okay and from my mom, too. So, because of our flair for the creative – he tells me there is no recipe yet, it is still in his head. Once it’s on paper I promise to pass it along to you.

I’m not a natural in the kitchen, but I just got a new cookbook for make-ahead-and-freeze meals. I used to use Dream Dinners, and love the concept. Anyway, you plan a day of cooking once per month (ideally with friends) and prepare meals to freeze. There is a whole chapter in this book for veggie dishes. If any of them turn out, I’ll let you know!

3. Thanks for your input girls! Susan I will be looking forward to recipes from you. I’m always on the hunt for delicious veggie ideas. I also have a friend who does once a month cooking, with a large family she loves not having to think about lengthy prep time in the kitchen each afternoon.
