
Fires in the fireplace, cozy sweaters and comfort food. Yes, Autumn is here! One of my favorite fall and winter comfort foods is homemade Chili. There is just something about homemade chile with a side of cornbread that makes it the perfect dinner for fall. I use a boxed corn bread mix to make things simple. But to make the corn bread special, I add sliced green onions to the batter before cooking. This is the perfect meal to make after a day hiking in the woods. It is fast and easy, taking less than 1/2 hour from start to finish. To make this simple easy meal special, use fun colorful dishes and light some candles. The recipe follows.
Black Bean Chili Recipe
2 Pounds Ground Sirloin
1 Tablespoon Extra Virgin Oil Oil
1 Tablespoon Worcestershire Sauce
1 Medium Onion Chopped
3-4 Cloves of Garlic, finely chopped
3 Tablespoons Dark Chili Powder
2 Tablespoons Ground Cumin
1/2 teaspoon Cayenne Pepper
2 Cups Beef Stock
1, 14-1/2 Ounce Can Diced Tomatoes
1, 15 Ounce Can of Tomato Sauce
2, 15 Ounce Cans of Black Beans, Drained and Rinsed
Brown ground sirloin, onions and garlic in olive oil until the beef is browned and the onions are tender. Add worcestershire, chili powder and cumin to ground beef mixture and cook and stir for a few minutes. Add diced tomatoes, tomato sauce, beef broth and black beans and cayenne pepper to mixture. Simmer for 20-25 minutes. Serve with shredded cheddar cheese for topping and corn bread. Chopped onions and a dollop of sour cream make great toppings too.

17. I love to make chili and I read recipes avidly but seldom stick with them to the letter. I get the gist but go off my own direction. So will be trying to get the gist of this next week. The weather is cool now and chili will warm the bones and cheer the hearts.

19. Your chili recipe will be perfect for the Mt. House. Althought we usually cook the beans “from scratch” I’m always on the lookout for recipes that use quick to cook thiings when I’m there. Everything could be waiting in the cupboard except the ground sirloin. Good!
