I want to share with you a new favorite at our house. Many of you may be very familiar with this recipe but it was new to us. I’m thinking it may be a regional favorite as most people I ask have not heard of it. Oh, have we been missing out!!
Jiffy Corn Casserole
- 1 can cream style corn
- 1 can whole style corn, drained (I use no salt added for both of these)
- 2 eggs beaten
- 1 stick melted butter (I use 1/2 c olive oil)
- 1 cup sour cream (I use no fat)
- 1 sm. box Jiffy cornbread mix
- Grated cheese for the top
Mix all ingredients except the cheese together. Pour into greased 9×13 pan (I prefer an oblong casserole, it makes a deeper presentation.) Spinkle cheese on top, and bake at 325 degrees for approx. 50 minutes. (I start watching at about 45 min. it is ready when the center is set, if you use a 9×13 it bakes in a little less time.)
I serve it with sour cream, guacamole, and mango salsa as the main course. I understand that it makes a great side dish to taco or tortilla soup. This is so yummy on a cold winter evening, and to give you a little taste of what winter looks like in my backyard today . . .

I just wanted to thank you for posting your recipe for Jiffy Corn Casserole. I can’t wait to make it for my husband because:
1) Corn is his favorite vegetable.
2) He is tired of always seeing “Green Beach Cassarole”
3) My husband loves corn bread.
4) He’s not much for cassaroles, but I bet anything he will LOVE this one!
5) I want to surprise him for the coming holidays!
Again, thanks for the great recipe. I’m not much of a cook, but I think I can manage this one, and I think it sounds delicious! (I’ll may throw some green onion and red pimento on top just to make it look a little more festive.)

2. I have made this many times is also a favorite. Try adding a can of chopped green chilies. It is so tasty!!!!

4. Deb, this has been an addition to our Thanksgiving menu for the past six years. I now just add the cheese to the mixture. I use a deep round casserole. This recipe is so easy and delivers a tasty side dish.

7. Thanks to each of you who gave this recipe your stamp of approval. I definitely want to try some of the suggested additions, like green chiles, onion, and pimento. I am not one who loves to cook, so when something is easy and yummy – I am all over it!
Any other suggestions or add ins would be welcome. I know there is a recipe out there which includes sugar. How much fun it is to add a little creativity.

BTW – We don’t live in the coutry, just the far out suburbs on a hill with woods behind. I will tell you that as long as I provide dinner, the deer aren’t picky about what’s on the menu!

8. Thanks Deb for posting this. I first tasted this casserole about 15 years ago in Ohio at an office pot luck and loved it. I jotted down the recipe on a piece of paper when it was shared with me by the friend and co-worker who brought it. Several years ago we moved to the Atlanta, GA area and in the process the recipe was lost. It is 2:20 a.m. and I was checking e-mails and there it was!

10. I will try this recipe, it sounds delicious and different from the usual dishes srved during holidays. I may try a variation later by adding some little smokey sausages and a some green chiles. Served with a green salad that would make a great easy meal!

15. I also made this for Christmas Day and it was very well received. I had some leftover, so I reheated it in the oven the next day much to the delight of my daughter who is now a fan of this casserole! I will definitely make this one again.

17. Hi, Deb, I found a recipe very close to this one in an old cookbook, and tried it for the first time this past weekend. It is delicious, keeps well, and warms beautifully in the microwave. It calls for 8 1/2 oz. cans of corn-I don’t know if you used that size or not. This is a keeper even though
I was hoping for a creamier texture to mimic a prepared dish we bought at Christmastime. It is called “Sweet Corn Bake”, is described “cream-style sweet corn, corn meal and masa flour are combined to create a unique and delicious slightly sweet side dish.” The ingredients, without the components: water, margarine, corn, sugar, masa corn flour, corn meal, cream, modified corn starch, salt, baking powder. I have looked diligently for something even close, but to no avail. Any ideas? Kudos to you. Nicky

18. Hi Nicky, I’ll bet there are many yummy variations of this dish. I had never even heard of it before last Fall, but I am sure thankful to my friend for sharing it with me.
I use 14 3/4 oz. cans of corn, one of low sodium cream style and one low sodium regular sweet corn. You might want to try this one, and see how close it comes to the one you want. As I read through your list of ingredients, many of them would be included in the Jiffy Corn Bread mix. I think this one is pretty creamy, we might have to ask the others what they think.

19. This is a very old southern favorite (and also very popular in the midwest), with a slight difference. It is mosty frequently called Corn Puddin’ – notice no “g” at the end. My grandmother made this frequently and she was born in 1895. It is very, very good and a great “comfort” food.

20. Hi Dee, It is indeed comfort food. I have discovered that we crave it about every other week.
Having you use the word “puddin’” made me laugh. We had a neighbor a number of years ago who had spent her whole life in the South, prior to a brief stay in the Midwest. We became very dear friends spending hours gabbing over spiced tea. We would always get the giggles however, because anytime my dh chatted with her I would have to “translate.” And one of the words he had the hardest time with was “puddin’.”

21. This is a fantastic dish. I used to make it quite often, but forgot the recipe & was thrilled to find it here (will write it down this time…) If a couple tablespoons of sugar is added, it tastes like what used to be a standard side dish at a certain Mexican chain restaurant- can I say Chi-Chi’s on here ?

I love this recipe…I made one similar, I used a can of Mexican corn instead of regular and a touch of cayenne pepper and a little chopped green onion….my family loved it. Happy Thanksgiving

25. I have made this dish three times now for various functions and it has always been a hit. The last time that I made it I forgot to drain the water from the canned kernel corn, so I just cooked it a little longer and I think it even came out more moist..everyone at the parties loved it! thanks…and I loved that it was sooooo easy!!
