I have been eating a mostly vegetarian diet for over a year now, and have discovered a few recipes that we love. This particular recipe is one of my own creations, my dh and I not only find it yummy, but agree that it is the “Easiest Pasta Dish Ever!”

Tortellini and Spinach

1 package tortellini
1 sliced onion
1 small package sliced mushrooms
1 small package fresh baby spinach
Minced garlic to taste
2 tbsp olive oil
1/2 cup Feta Cheese
Fresh Parmesan Cheese

Fill a 2 quart pan with water and place it on the stove to bring it  to a boil. Toss in sliced onions and mushrooms and allow them to cook as the water is heating. Once water, onions, and mushrooms are boiling – add tortellini and cook according to package instructions. Place fresh spinach in the bottom of your colander. Once pasta is cooked pour the contents of the pan over the spinach and drain off the water through the colander. After the water is drained place all of the ingredients back in the original cooking pan.

Add the garlic, olive oil, and Feta cheese. Then toss gently to mix ingredients. Place in serving dishes, sprinkle with fresh parmesan, and zap for a moment to melt the cheese. YUM!

Not only is this easy to cook, but clean up is a breeze! Of course, if you would like to serve this to company . . . place it in a beautiful serving dish before adding the parmesan and it is ready for the table.

I serve this with a salad or vegetable and a glass of wine. I hope you enjoy!

1. Everytime I look at this pic, Deb, my mouth starts to water. Looks like a quick and easy dish to make which are always my favorite. Thanks for sharing!

2. I am not a fan of cooking or cleaning. I think I avoid cooking because it creates a need to clean up. This dish is so easy and causes very little mess. Gooey cheesey pasta – no wonder we like it!!
